A simple nutritious fritter recipe that goes down really easy with kids (and is a great meal prep for adults)!
Ingredients (serves 4):
- 1 large sweet potato
- 2 eggs
- 1 cup flour (wholemeal / gf)
- 1 teaspoon baking powder
- 1 cup shredded mozzarella
- 1/2 cup Parmesan
- 1 teaspoon paprika
- Garlic infused oil
- 1 can corn (125g)
- Spring onions, finely sliced
- Optional: 125g can of salmon
Method:
- Cover sweet potato in olive oil and salt, then wrap in foil. Bake at 200 degrees celsius for 45 mins (or until soft). Can also do this in an air fryer.
- Scrape out inside of sweet potato and mash in a large bowl. Add eggs, then cheese. Mix well, until smooth.
- Stir in flour, baking powder & paprika
- Mix in corn and spring onion (and canned salmon if using)
- In a large pan, heat garlic infused oil. Spoon out pancake sized scoops of mix. Fry until firm then flip. Both sides should be a bit crispy.
Keep these in the fridge in a sealed container for up to 3 days.
